Well, it's Ground Hog Day.  I, myself don't put much stock into whether the little guy sees his shadow or not being a way to predict the coming of Spring.  Seriously, we live in Southwest Oklahoma.  We know that the weather here can change on a dime. (Spoiler: Winter stays)

But, I'll play along.  Like maybe watching Bill Murray's Ground Hog Day.  It's a fun way to celebrate this 'special event' kind of a day.

I also like to cook ground hog!  Yes, I'll admit it, I'm a fool for sausage! Whether it be a pizza topping, or cooked on the grill or mixed with other goodies, I love sausage!  So, just in time for Ground Hog day and the Big Game this weekend is my favorite Sausage (ground hog) recipe!

Sausage Balls

1 pound sausage

3 cups baking mix (really any will work)

4 cups shredded cheddar cheese (your choice on sharp or mild)

sprinkles of pepper

Mix all ingredients together, form small balls from the mixture and bake at 375 degrees for 18-20 minutes.

These dip well in all kinds of dip like Ranch, or Honey Mustard (my favorite!).  Makes about 5 dozen.

I can snack on these all day long!  They are addictive! So whether you believe the little rat's predictive powers or not, you can still celebrate this day with comfort food! Yum.
