As we embark on the final full week of summer, the Oklahoma State Fair is gearing up to open on Thursday with the last hurrah of this heat. While there will be plenty of things to experience, spend on, and shop for, the new foods hitting the midway this year are shockingly wild.

The last time I hit the fair, chocolate-covered bacon was the revolutionary hit. Everyone wanted to try such a wild concoction of sweet and salty flavor, and it didn't disappoint.

It was also a million degrees that year in State Fair Park.

While the weather may repeat itself in 2026, the foods are nothing like they were decades ago. If you end up tasting the goods, be sure to share those thoughts. The crazier the dish, the less adventurous people tend to be. A little encouragement and reassurance go a long way.
