I've often wondered how the BBQ pork sandwich became the main dish in the official meal of Oklahoma. After all, it's not all that common on menus around the state. But fried fish, particularly catfish is a beloved delicacy that most Oklahomans can agree on.
While some think catfish is catfish anywhere you go, there are some huge differences between eateries when you consider yourself a connoisseur.
When it comes down to it, Oklahoma's best catfish joint might be Bill's Fish House in the tiny town of Waurika.
Bill's has been around for ages, and people across Southwest Oklahoma regularly make the drive to the middle of nowhere just to eat it. We're talking two hours there to eat, and two hours home just for a stellar meal.
It's not just the fish.
When you dine out, it's never as simple as just eating food, it's 50/50 food and entertainment. A place to experience, people to watch and meet, and conversations to have across a table. It's more than just the meal, and that's likely a huge factor in Bill's success.
If you've never been to a small-town mom-and-pop restaurant in rural Oklahoma, it's usually a heartwarming experience. Everyone who works in the joint is likely making a lifelong career of it. If the owners aren't in the kitchen, they're usually on the dining floor walking around making sure everything is as expected. It's a weird experience if you're from a bigger city.
I'm sure it's impossible to determine with any accuracy where the best fried catfish can be found in Oklahoma, there are so many little fry joints to sample across the map, but a lot of people agree it's Bill's... but since people are so willing to drive for amazing food, maybe share your opinion here on who you think has the best.
