Thanksgiving 103: Savory Smoked Turkey
Growing up in the Southern Plains states, it's hard to realize that outside of state fair food and sub-par Yankee BBQ, the masses don't know all about smoked meats. If you've never had a smoked turkey, you are missing out.
The absolutely best thing about this method is this... It's pretty easy to pull off, but there's still a chance you can mess it up.
For the most part, it comes down to your personal tastes, and there's no real guide to help you figure out what you like. From the type of charcoal you use, the green wood you smoke with, even the flavor pallet and spices you rub all over that bird. You're just expected to know these kind of things... But there is an upside. Chances are, if you like BBQ, you already know what types of flavors you want.
This is also the second easiest and tastiest method to nail Thanksgiving. You just prepare your coals, season the meat, pop it in the smoker, and do a minimal hourly maintenance.
If you're up for it, and you should be, but don't have a smoker or the confidence to take on such a monumental task, you can always reach out to the pros. Rib Crib smoked our holiday turkey last year, and it was phenomenal. Just give them a call, then swing in and pick it up.
